Salmon Baked in Foil

2 salmon fillets
1-2 tablespoons olive oil
Salt and pepper, to taste
2 small Roma tomatoes, chopped
2 green onions, sliced
Juice from 1 lemon
1 tablespoon chopped fresh herbs

  1. Heat the oven to 400°F.
  2. Sprinkle salmon with salt and pepper. Top the salmon filets with the chopped tomato, onion, herbs, and season with salt and pepper.
  3. Place each filet on a large piece of aluminum foil. Drizzle olive oil over the vegetables. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
  4. Place the packets on a baking sheet and bake for 25 minutes. Remove from oven and carefully open the packets for serving.
