2 salmon fillets
1-2 tablespoons olive oil
Salt and pepper, to taste
2 small Roma tomatoes, chopped
2 green onions, sliced
Juice from 1 lemon
1 tablespoon chopped fresh herbs
- Heat the oven to 400°F.
- Sprinkle salmon with salt and pepper. Top the salmon filets with the chopped tomato, onion, herbs, and season with salt and pepper.
- Place each filet on a large piece of aluminum foil. Drizzle olive oil over the vegetables. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
- Place the packets on a baking sheet and bake for 25 minutes. Remove from oven and carefully open the packets for serving.
