Potato Herb Foil Packets

1 lb yukon gold potatoes, cubed
1 small onion, chopped
2 tablespoons olive oil
salt and pepper
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh sage

  1. Toss the potatoes with the onion, oil, plenty of salt, pepper, and herbs in a bowl.
  2. Lay two pieces of heavy duty aluminum foil on the countertop, large enough to enfold a pile each of potato mix. Pile the potatoes in the middle of each piece of foil and spread them out a little. Fold up the sides of the foil and roll and pinch together tightly. Fold up the ends and seal tightly.
  3. Place on a gas or charcoal grill over medium heat and cook, flipping the packet once, for about 20 minutes until the potatoes are tender. Open packets carefully and enjoy.
