Parmesan Cauliflower Bites

1/2 large head cauliflower, cut into bite sized florets
1 cup panko breadcrumbs 
1/2 cup grated Parmesan cheese
1/2 teaspoon seasoned salt
Pinch black pepper 
2 large eggs
Optional: chopped parsley

Yogurt sauce
1 cup plain Greek yogurt
Juice from half a lemon
1/4 teaspoon garlic powder
1/2 teaspoon sea salt

  1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  2. Add breadcrumbs, cheese, salt, and pepper to a large bowl and mix. Beat eggs in another bowl and dip the florets in the egg mixture; shake off the excess egg. Coat the florets in bread crumb mixture evenly and place on prepared pan. Repeat until all cauliflower is coated. 
  3. Bake for about 25 minutes or until golden brown. Mix yogurt sauce ingredients together in a bowl while cauliflower bakes. Sprinkle florets with parsley and serve with yogurt sauce.
