Lemon Coconut Popsicles

1 13.66 oz can coconut milk
juice of 2 lemons
1/4 cup maple syrup, or more if you like it sweeter
1/4 teaspoon vanilla
pinch sea salt

Blend all ingredients together in a blender until smooth. Pour into each popsicle mold. Insert the sticks if you’re using a mold that has slots for sticks. If you mold does not, freeze popsicles for 2 hours and insert wooden sticks in the center. Continue to freeze for at least 4 more hours or overnight. This recipe makes enough for about 6 popsicles.
