Granola Pancakes with Blueberry Sauce

1 package Arrowhead Mills Pancake & Waffle Mix
1 cup granola
Vegetable oil or butter
Blueberry Sauce (Makes enough for about 2-3 servings):
1/4 cup sugar
1 teaspoon arrowroot powder
pinch salt
1/4 cup water
1 heaping cup blueberries (frozen is fine)
Optional but delicious: a squeeze of lemon juice

  1. Make the sauce: mix the sugar, arrowroot powder, and salt together in a small saucepan. Add the water and stir. Mix in the blueberries and place over medium heat. When mixture starts to boil, reduce heat and cook about 3-4 minutes, stirring occasionally, until thickened. Let cool or serve warm.
  2. Make the pancakes according to package directions. Use melted butter in the batter instead of oil for a richer flavor. After you pour the batter in a hot pan, sprinkle about 1 tablespoon or so of granola over the batter. Proceed to cook the pancake until browned on both sides. Repeat with remaining batter. Serve pancakes with more butter and blueberry sauce.
