Egg Zucchini Breakfast Wraps

Serves 2

4 eggs
1 tablespoon milk or half and half
salt and pepper to taste
1/4 cup shredded cheese
1 tablespoon chopped fresh sage and parsley
1 tablespoon butter
3 tablespoons onion, chopped
1 cup zucchini, small dice
1/4 cup chopped ham
2 large whole wheat tortillas

  1. Whisk eggs, milk or half and half, salt, pepper, and cheese in a small bowl.
  2. Melt butter in a medium skillet and fry onions over medium heat until lightly browned. Add zucchini, ham, and herbs and saute about 3-5 minutes. Pour in egg mixture and cook, stirring lightly just until eggs are set but not dry.
  3. Heat tortillas over open gas flame, if desired. Mound eggs atop the tortillas and roll up, burrito-style. Serve with salsa and sour cream or plain Greek-style yogurt.
