4 eggs, hard boiled, peeled, chopped
1 ripe avocado, cubed
1/2 stalk celery, chopped fine
2 tablespoons sweet onion, chopped fine
1/4 cup mayonnaise
1 teaspoon yellow or dijon mustard
1/2 teaspoon cider vinegar or lemon juice
1 tablespoon chopped fresh herbs such as parsley, chives, etc.
salt and pepper to taste
Mix the mayo, mustard, and vinegar in a bowl. Add the eggs and veggies and toss to combine. Season generously with salt and pepper. Add the avocado cubes and toss gently. Taste and add more salt if needed.
