Colorful Holiday Slaw

2 cups green cabbage, shredded
2 cups red cabbage, shredded
1 large carrot, shredded
1 large black radish, shredded
1 medium daikon radish, shredded
1 cup parsley, chopped

Dressing:
1 shallot, minced
½ cup veganaise or mayonnaise
2 tablespoons apple cider vinegar
2 teaspoons maple syrup
sea salt and pepper to taste

Whisk together the dressing ingredients in a large bowl. Add the remaining ingredients and toss to coat. Taste and add more salt if needed. Allow to sit in the refrigerator for 30 minutes to allow the flavors to meld.
