Classic Fish Cakes

1 lb cooked fish such as whitefish, trout, or salmon, flaked with a fork
1/4 cup minced sweet onion or shallot
1/2 cup bread crumbs
1 egg
1 small dill pickle, chopped fine
2 teaspoons dill pickle juice
salt and pepper
neutral oil for frying

  1. Combine the flaked fish, onion, bread crumbs, egg, pickle, pickle juice, salt and pepper in a bowl. Form into patties.
  2. Heat a few tablespoons of oil in a cast iron or heavy skillet over medium heat and fry patties until golden brown, about 3-4 minutes. Flip and cook the other sides until golden brown. Serve hot with a squeeze of lemon.
