Chicken Quesadillas

2 cups cooked chicken, chopped
1 can green chilies
2-3 cups shredded cheddar cheese or Mexican shred mix
4 green onions, chopped
6 small flour tortillas
Optional: hot sauce

  1. Arrange the flour tortillas on a clean surface and sprinkle half of each tortilla with about half the cheese. Sprinkle the chicken, green chilies, and green onions over the cheese. Sprinkle on the remaining cheese. Sprinkle a few drops of hot sauce, if desired. Fold tortillas over and press down.
  2. Spray a large heavy skillet with cooking spray and turn heat to medium.
  3. Cook quesadillas in the hot skillet, pressing down as they cook with a metal spatula, until browned and cheese is starting to melt. Flip the quesadillas and cook until browned on the other side and cheese is fully melted. Repeat with remaining quesadillas. Spray pan in between each batch. Cut each quesadilla into 2 or 3 wedges and serve immediately with salsa, guacamole, and sour cream.
