Big Chocolate Chip Skillet Cookie

6 tablespoons unsalted butter, softened
1/3 cup packed brown sugar
1/2 cup cane sugar
1 egg
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 cup semisweet chocolate chips
optional but nice: flaky salt for sprinkling

  1. Heat oven to 350°F. In a large bowl, cream together the butter and sugars. Stir in egg and vanilla. Stir in flour, baking soda, and salt until well combined. Stir in chips, reserving 1-2 tablespoons. Pat dough into a well seasoned 10-inch cast-iron skillet using your hands; spread all the way to the edges of the pan and smooth the top. Sprinkle on the reserved chocolate chips and some flaky salt.
  2. Bake until cookie is golden brown and set in the center, 20-22 minutes. Let cool 30 minutes (if you can wait that long!) Or enjoy while it’s still warm and gooey with vanilla ice cream.
