1 ½ cups oats, finely ground in a food processor
2 ripe bananas, mashed
1/3 cup smooth peanut butter
1 tablespoon chia seeds
- Mash the bananas and mix with the peanut butter until smooth.
- Mix in the oat flour and chia seeds until combined. Chill dough for 15-20 minutes. Preheat oven to 325°F.
- Cut dough in half. Place half the dough between 2 sheets of parchment paper and return the other half to the fridge. Roll out the dough in between the parchment paper to about 1/3 inch thickness. Cut out shapes as desired. Re-roll scraps until you use up all the dough. Transfer cookies to a parchment lined baking sheet.
- Bake for 25-30 minutes or until golden. Remove and let cool completely before transferring to an air-tight container.
