Apple Almond Cake

8 tablespoons (1 stick) butter, melted
3 medium apples, peeled, chopped
1/2 cup whole wheat pastry flour
1/2 cup almond flour
1 teaspoon baking powder
1/4 teaspoon sea salt
2 eggs
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
optional: 1 teaspoon almond extract 
1/4 cup slivered almonds

  1. Heat oven to 350ºF. Spray an 8-inch round cake pan with cooking spray.  
  2. Whisk together the flours, baking powder, and salt together in a bowl.
  3. Beat the eggs in a large bowl until fluffy. Add the melted butter, brown sugar, and vanilla, and whisk to combine. Add the flour mixture and stir with a spoon until just combined. Fold in the chopped apples.
  4. Pour the batter into the prepared pan and smooth out the top. Sprinkle the sliced almonds evenly over the batter. Bake until a toothpick or cake tester inserted in the center comes out clean, about 40 minutes. Let cool for 15 minutes before cutting. When it’s completely cool you can run a knife around the edge and invert onto a plate, then invert again onto a serving plate.
