Vegan Crispy Rice Footballs

Adapted from

One (10 oz) package Dandies Mini Marshmallows 
4 tablespoons vegan butter of your choice 
1 tablespoon water
4 1/2 cups crisp cocoa rice cereal

  1. In a large microwave safe bowl, add the Dandies, vegan butter, and water. Microwave in 30 second intervals, giving it a quick stir between each interval. Continue this until mixture is fully melted.
  2. Add the rice cereal to melted mixture and mix to fully coat the cereal. Scoop out about 1/3 cupfuls and shape into football shapes. If it’s too warm you can let it sit for a few minutes to cool. If the mixture is too sticky, wet your hands with a little water. Cool the footballs in the refrigerator. Makes about 1 dozen footballs. Decorate with laces if desired.
  3. To make laces, mix ¼ cup powdered sugar with 1 teaspoon water. Whisk until smooth. Adjust the mixture with more water or more powdered sugar until it is thick enough to pipe onto the footballs. Get a Ziplock or plastic sandwich bag and snip the tip of one corner. Add the powdered sugar mix to the bag and squeeze out the glaze onto the footballs in a lace pattern. Let harden before serving.
