June is a great time to make a healthy breakfast parfait or lovely dessert parfait featuring the first berry of the season. Why bother making a parfait when you can just throw everything in a bowl and call it good? Because they are fun to make and beautiful to behold! All you need is some fresh fruit, something creamy, something crunchy, a glass jar, and voila.
We made two parfaits, one using dairy yogurt, strawberries, and granola, and the other with sweetened whipped cream, strawberries, crumbled snickerdoodle cookie, and chocolate chips. Mix and match any kind of fresh fruit such as berries, cherries, chopped kiwi, pineapple, banana, orange, mango, etc.
Breakfast parfaits are healthy and easy to make. Choose any kind of yogurt, granola, nuts, seeds, coconut flakes, nut butter, and bite-size fruit of your choice. Make them the night before or make a few for the week.
For dessert parfaits use pudding, sweetened whipped cream, sweetened coconut cream, sweetened ricotta, or sweetened cream fraiche. Add a layer of cubed cake, crumbled cookies or graham crackers, chocolate chips or chopped chocolate, maybe some chocolate or fruit syrup, and of course, your fresh fruit. Maybe try some Nutella, lemon curd, or jam. Lots of possibilities here. Enjoy!
