Potato Bacon Bites

1 lb red potatoes, washed
1 package thin slice bacon
kosher salt
1 teaspoon Dijon mustard
1 tablespoon olive oil
salt and pepper
sour cream + chopped scallions
toothpicks

  1. Cut the potatoes into 1 inch chunks. Place in a pot, cover with water, add 1 tablespoon salt, bring to a boil, and cook until tender but not mushy, about 15 minutes. Drain and let cool.
  2. Cut the bacon slices into thirds.
  3. Whisk together the mustard, olive oil, and more salt and fresh cracked pepper in a bowl. Add the cooled potatoes and toss to coat.
  4. Heat oven to 400°F. Wrap a piece of bacon around each potato and secure with a toothpick. (The bacon won’t go all the way around the cube.) Spread the potato bacon bites on a rimmed sheetpan and bake for 30 minutes. Serve hot with sour cream and chopped scallions.
