Pfeffernusse Cookies

1 stick (1/2 cup) butter, softened
3/4 cup brown sugar
1/4 cup molasses
1 egg
2 1/4 cups white spelt or all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1/2 teaspoon black pepper
1/2 teaspoon ground anise seed
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1 cup powdered sugar

  1. Combine butter, brown sugar and molasses in a large mixing bowl and beat until fluffy. Add the egg and beat well. Whisk together the flour, baking soda and spices in a separate bowl. Add the flour mixture to the wet ingredients and beat to combine.
  2. Preheat oven to 350 degrees. Scoop out heaping teaspoonsful of cookie dough and roll into balls about 1 inch thick. Place the dough balls on 2 greased baking sheets. Bake for 13 minutes, until firm to the touch. Remove from oven and let cool on the sheets for 2-3 minutes.
  3. Place the powdered sugar in a container with a lid. Drop a few cookies into the powdered sugar, cover and shake gently to coat. Transfer coated cookies to a wire cooling rack and let cool completely. Repeat with remaining cookies. Makes 2 dozen.
