Orange Buttermilk French Toast

When you buy buttermilk for a recipe, you inevitably have some leftover. Here is one delicious way to use up some of that liquid gold.

4 eggs
3/4 cup buttermilk
2 teaspoons brown sugar
1/4 teaspoon sea salt
1 teaspoon finely grated orange zest
6 slices stale sandwich bread
ghee or clarified butter*

  1. Beat all ingredients (except bread and ghee) together in a large bowl.
  2. Dip the bread slices in the batter to coat. Let the liquid soak in for a few beats, but be careful not to oversoak or the slices will fall apart. You can dip and cook as you go, or dip them all and pile them on a plate.
  3. Heat a heavy skillet over medium heat. Melt 1 teaspoon clarified butter and cook the slices about 1-2 minutes per side in batches until lightly browned; add more ghee as needed. Enjoy hot with butter and maple syrup.

*If you don’t have any ghee you can use butter. Ghee or clarified butter are ideal, however, because they won’t burn, like the milk solids in butter will. Here is how to make your own ghee.
