1/2 cup (1 stick) butter, melted
1 cup granulated sugar
2 tablespoons water
1 teaspoon vanilla extract
3/4 cup whole wheat pastry flour
1/2 cup cocoa
1/2 teaspoon sea salt
Optional: 1/2 cup chopped walnuts or 1/4 cup chocolate chips
- Grease a square 8 x 8 pan with cooking spray and heat the oven to 350°F.
- Beat the butter and sugar together. Add the eggs, water, and vanilla and beat until smooth.
- Add the flour, cocoa, and salt and mix well until there are no lumps of cocoa. Stir in walnuts if using.
- Spread batter in pan and sprinkle over the chocolate chips, if using. Bake for about 25 – 30 minutes or until a toothpick inserted in the center comes out mostly clean. Cool before cutting into squares.
