If you have time to cook scrambled eggs in a pan, that is preferable, as cooking them in the microwave may yield a tougher texture. But cooking them this way is good if you’re in a hurry and really want something substantial for breakfast.

Optional: 2 tablespoons shredded cheese, 1 tablespoon crumbled bacon, 1 tablespoon chopped ham, 1 tablespoon finely chopped bell pepper, 1 tablespoon chopped fresh spinach
Spray a coffee mug with cooking spray. Crack the eggs into the mug and beat with salt and pepper. Stir in optional ingredients. Microwave on high for 1 minute. Check to see if it’s cooked completely. Cook a few more seconds if it still looks runny. Let cool a few seconds before digging in.
