Mini Fried Pork Burritos

Make these delicious and easy burritos for game day or any time you want a smaller burrito. These also taste great heated up in the oven the next day.

1 tablespoon vegetable oil
1 medium red onion, chopped
1 lb pork, diced small
2 teaspoons taco seasoning
1 can refried beans
1 can green chilies
3 cups shredded monterey jack cheese
hot sauce
12 8-inch tortillas
oil for frying
optional: diced avocado, sour cream, salsa

  1. Heat the oil in a large skillet over medium heat. Add the onions and season with salt. Saute until the onions soften, about 7 minutes. Add the pork and the taco seasoning and cook until the pork is no longer pink, about 3 minutes. Remove from heat.
  2. To assemble the burritos, lay the tortillas on a clean surface and spread about 2 tablespoons of refried beans across the middle. Leave about an inch of tortilla on both sides. If you like things spicy, this is a good time to sprinkle some hot sauce on the beans. Distribute the pork mix and green chilies over the beans. Sprinkle the cheese over the chilies. Fold in opposite sides of each tortilla, then roll up tightly. Place on a plate seam sides down.
  3. Heat about 1/4 inch of oil in another skillet over medium heat until oil is hot. Place a few burritos seam side down and fry until golden brown, about 1 minute. Turn burritos one quarter and brown again. Turn the burritos 2 more times to brown all the sides. Serve immediately with optional toppings.
