Honey Walnut Blondies

1 stick unsalted butter 
1/3 cup honey 
2/3 cup packed brown sugar 
1 large egg 
1 teaspoon vanilla extract 
1/2 teaspoon salt 
1 1/4 cups whole wheat pastry flour 
1/2 cup toasted, chopped walnuts

  1. Spray a 8 x 8 baking pan with cooking spray.
  2. Melt the butter and honey together in a small pan over low heat. Let cool about 5 minutes. 
  3. Beat the brown sugar, egg, vanilla, and salt in a bowl. Beat in the honey butter mixture. Add in the flour and walnuts and stir until smooth. Pour into prepared pan and bake at 350°F. for 25 – 27 minutes or until edges are lightly browned and the center is set. Let cool before cutting.
