Holiday Slaw

1 heaping cup shredded green cabbage
1 heaping cup shredded red cabbage
1 small daikon radish, shredded
1 carrot, shredded
1 small shallot, chopped fine
1/2 cup pomegranate arils
1/2 cup chopped parsley
1/4 cup apple cider vinegar
1/4 cup olive oil
1 teaspoon maple syrup
1/2 teaspoon sea salt
black pepper to taste
Optional: sliced almonds

Toss the cabbage together in a bowl and season with salt. Toss again and let sit for a few minutes to allow the cabbage to soften a little. Add the daikon, carrot, pomegranate, shallot, and parsley and toss together. Add the vinegar, olive oil, maple syrup, salt and pepper and toss to coat evenly. Taste and add more vinegar, salt, or pepper, as needed. Sprinkle with almonds if desired before serving.
