Crustless Quiche Lorraine for Two

½ cup yellow onion, chopped fine
4 oz chopped ham
1 tablespoon butter
4 large eggs
1/2 cup heavy cream
1/2 teaspoon sea salt
big pinch white pepper
big pinch nutmeg
1/2 cup grated Gruyère, Swiss, or cheddar cheese

  1. Heat oven to 375°F. Spray an 8 inch oven safe skillet with cooking spray.
  2. Heat the butter in a separate skillet over medium heat. Saute the onions until they start to brown around the edges, about 3 minutes. Add the ham and cook until heated through and starting to brown a little, one more minute. Scatter the ham and onions over the bottom of prepared skillet.
  3. Sprinkle the grated cheese over the onion and ham.
  4. Beat the eggs with the cream, salt, pepper, and nutmeg until smooth. Pour over the grated cheese and onion mixture. Bake for 30 minutes. Enjoy immediately.
