Corned Beef Baked Potato

This recipe makes 2 servings.

1 large russet potato
butter
1/2 cup chopped corned beef
1/2 cup sauerkraut
2 slices Swiss cheese
Thousand island dressing*

Wash the potato well, dry with a paper towel, and rub with softened butter. Bake the potato at 350° until it’s soft when poked with a sharp knife, about an hour. Remove from oven and turn oven temp to 400°F. Let potato cool a couple minutes. Cut the potato in half lengthwise. Score the potato flesh in a crisscross pattern and dot with butter. Season lightly with salt. When the butter has melted, divide the corned beef between the potato halves. Top with the sauerkraut, some dressing, and the Swiss cheese. Place on a baking sheet and bake until the cheese is melted and the meat and kraut are heated through, about 5 minutes.

*Thousand Island Dressing
1 cup mayonnaise
1/4 cup chopped sweet pickles, or whatever kind of pickles you have
1/4 cup ketchup
1 tablespoon cider vinegar
1 teaspoon maple syrup
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Salt and pepper to taste

Mix all ingredients together.
