Chocolate Bacon Nut Clusters
1 cup dark or milk chocolate chips
1 teaspoon coconut oil
1 cup salted roasted nuts (we used cashews but you can mix and match almonds, peanuts, etc.)
2 slices bacon, fried until crisp, chopped
Melt chocolate and oil in a small saucepan over the lowest heat setting, stirring frequently until melted. Add the nuts and chopped bacon and stir to coat thoroughly. Drop by the tablespoonful onto a silicone or parchment-lined pan. Chill until clusters are hard, about 15 minutes. Enjoy! Makes about 10-12 clusters.
