Breakfast Quesadillas

Use any kind of filling you like in breakfast quesadillas. Chopped bacon and crumbled sausage work well. Any chopped vegetable you have on hand, any kind of onion. Get creative! Or leave out the meat and veggies and make plain cheese and egg quesadillas.

6 eggs
Salt and pepper, to taste
½ green or red pepper, diced small
½ cup ham, diced small
2 green onions, chopped 
4 tablespoons butter, divided
1 heaping cup shredded cheddar cheese
6 small wheat tortillas

  1. Whisk the eggs, salt and pepper in a bowl.
  2. In a large skillet, melt 2 tablespoons butter over medium heat. Add green pepper, ham, and green onions and cook a few minutes. Add the eggs and cook until just barely done. Don’t overcook as they will cook further in the tortillas. Remove eggs to bowl.
  3. Lay out the tortillas on the counter. Sprinkle some of the cheese on half of each tortilla. Divide the egg mixture over the cheese on each tortilla. Sprinkle with remaining cheese and fold over tortillas. 
  4. In the same skillet melt the remaining butter over medium heat. Place folded tortillas in pan, press down gently with a metal spatula, and cook for about 1-2 minutes per side until lightly browned and cheese is melted. Serve immediately.
