Asian Turkey Lettuce Wraps

Serves 5

1 lb ground turkey or chicken
4 cups fresh mixed oriental vegetables like bok choy, pea pods, and red pepper, chopped
1/3 cup teriyaki sauce
¼ cup Hoisin sauce
3 tablespoons peanut butter
2 tablespoons minced gingerroot
3 garlic gloves, minced
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
4 green onions, chopped
10 Boston lettuce leaves

  1. In a large skillet coated with cooking spray, stir the ground meat over medium heat until partially cooked. Add the vegetables and cook until they soften, about 5 minutes more. Stir in the teriyaki sauce, Hoisin sauce, peanut butter, ginger, garlic, sesame oil, and vinegar. Cook, stirring for about 5 minutes or until heated through.
  2. Remove from heat and place in a bowl, sprinkle with the chopped onion, and serve on a tray surrounded by lettuce leaves. (Put a ½ cup in each leaf and fold the lettuce over the filling.)

Frozen, chopped Asian-style vegetables make this a snap and an easy winter dish too.
 
If you like your food spicy add some Asian chili sauce or a little chili oil.
 
Serve with a side of brown rice and fruit for dessert for a wholesome meal.
