1 lb ripe tomatoes, diced
sea salt and black pepper
1/3 cup fresh basil, chopped
1 tablespoon extra virgin olive oil
1 small clove garlic, minced
optional: splash of red wine vinegar
1 loaf crusty baguette, sliced 3/4 inch thick
1/3 cup extra virgin olive oil
- Mix tomatoes, basil, garlic, oil, salt, pepper, and vinegar if using, in a bowl.
- Heat olive oil in a skillet and fry bread until golden brown on both sides. Drain on paper towel-lined plate.
- Spoon tomato mixture onto toasts and serve immediately.
