1 pint heirloom cherry tomatoes, halved
8 oz small fresh mozzarella balls, cut in half
handful fresh basil leaves, chopped
1 clove garlic, minced
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
Sea salt & black pepper
1 large baguette, sliced 1 inch thick on the diagonal
- Combine tomatoes, basil, mozzarella, olive oil, vinegar, garlic, salt & pepper in a bowl. Taste and add more salt, pepper, or vinegar if needed. Allow to sit at room temperature for flavors to meld.
- Place bread slices under broiler for about 1-2 minutes or until the bread is lightly toasted. Or grill the slices over medium heat until lightly grill marked.
- Top the bread slices with the tomato mozzarella mixture. Serve immediately.
