Caprese Bruschetta

1 pint heirloom cherry tomatoes, halved
8 oz small fresh mozzarella balls, cut in half
handful fresh basil leaves, chopped
1 clove garlic, minced
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
Sea salt & black pepper
1 large baguette, sliced 1 inch thick on the diagonal

  1. Combine tomatoes, basil, mozzarella, olive oil, vinegar, garlic, salt & pepper in a bowl. Taste and add more salt, pepper, or vinegar if needed. Allow to sit at room temperature for flavors to meld.
  2. Place bread slices under broiler for about 1-2 minutes or until the bread is lightly toasted. Or grill the slices over medium heat until lightly grill marked.
  3. Top the bread slices with the tomato mozzarella mixture. Serve immediately.
