2 slices sourdough bread, toasted
2-3 slices thick cut bacon, cut in half
1 beefsteak tomato, cut in 1/2 inch slices
1/2 an avocado
several crisp lettuce leaves
- Fry bacon slices until crisp. Drain on a paper towel.
- To assemble sandwich, spread mayo on both slices of toasted bread. Scoop all the flesh out of a half avocado with a large spoon and smash/spread it on one slice of toast on the mayo'd side. Layer tomato slices, bacon, and lettuce on the other piece of toast. Place the avocado toast on top of bacon toast and press down. Cut in half if desired. Serves 1.
