4 - 5 cooked and cooled beets
1 small sweet onion, sliced thin
2 teaspoons extra virgin olive oil
Rice, cider, or red vinegar to taste, about 1-2 tablespoons
sea salt and black pepper to taste
Slice the beets and toss them with the onions in a bowl. Sprinkle with the vinegar, oil and add salt and pepper to taste.
Add chopped fresh herbs if desired.
