Roasted Vegetable Salad

Serves 4

1 red bell pepper, chopped
1 summer squash or zucchini, diced large
½ red onion, chopped
2 tablespoons extra-virgin olive oil
1/3 cup pine nuts
1 cup whole wheat couscous or bulgur
1 bunch basil
4 cups arugula
¼ cup oil-packed sun-dried tomatoes, drained and chopped
½ teaspoon sea salt
Freshly ground black pepper to taste
1 tablespoon balsamic vinegar

Preheat oven to 425 degrees. Toss the red pepper, squash, and onion with the oil in bowl and spread on a roasting pan. Roast the vegetables until tender and starting to brown, about 20 minutes, stirring about halfway through. Sprinkle with pine nuts and roast until nuts are brown, another 3-5 minutes. While the vegetables are roasting, prepare the couscous or bulgur according to package directions. Pour into a sieve and allow any excess water to drain. Rough chop the basil and arugula. Place in a large salad bowl, add the cooked grain and toss with the roasted vegetables, and sun-dried tomatoes.
