Coconut Oil Brownies

3/4 cup sugar
1 cup coconut oil, melted
1 teaspoon vanilla extract
2 eggs
1/2 cup white spelt flour or all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon sea salt
1/4 teaspoon baking powder
1/2 cup chopped walnuts

  1. Preheat the oven to 350°F. Spray a 8 x 8-inch baking pan with nonstick cooking spray.
  2. Beat together the sugar, coconut oil, vanilla and eggs in a medium bowl until smooth. Add the flour, cocoa powder, salt and baking powder and stir until just combined. Stir in the walnuts.
  3. Spread batter evenly in prepared pan. Bake until brownies are set in the center, 25 – 30 minutes. Let cool before cutting.
