Wild Rice & Split Pea Salad

Serves 8

Almond Dressing:
1 clove garlic, minced
1/4 cup almond butter
zest of one lemon
1/4 cup fresh lemon juice
2 tablespoons olive oil
1/4 cup hot water
1/2 teaspoon salt

1 lb snap peas or green beans, cooked until tender crisp, chilled in cold water
4 cups cooked wild rice (1 1/4 cup dry)
1 cup cooked yellow split peas (3/4 cup dry)
3 tablespoons chives, chopped
1/4 cup goat cheese, crumbled (optional)

Whisk together the garlic, almond butter, zest and juice, and olive oil. Add the hot water to thin and then the salt. Set aside. In a large bowl combine the rice, split peas, peas or beans, and about half the dressing. Toss well. Add more dressing if needed. Salt to taste. Serve topped with chives and goat cheese.
