Wheat Berry & Barley Salad with Smoked Gouda

Serves 8

1 cup wheat berries
1 cup pearl barley
1 tablespoon salt in 4 qt. of water
1 1/2 cups seasonal vegetables, medium dice (cucumbers, celery, cabbage, fennel, peppers, peas)
1 pint cherry tomatoes cut in half
6 green onions, thinly sliced
½ cup of red onion, finely chopped
3/4 cup fresh parsley, finely chopped
½ cup smoked Gouda cheese, diced small*
Seasonal salad greens

Dressing:
2 garlic cloves, minced
¼ cup balsamic vinegar
¼ cup extra virgin olive oil
½ teaspoon black pepper
1 ½ teaspoons salt

Add wheat berries to boiling salted water. Stir, reduce heat and simmer 30 minutes, then stir barley into the pot and simmer about 30-40 minutes more. When grains are done, drain and cool in a large serving bowl. While the grains cook, chop the vegetables. For dressing: Whisk together the minced garlic, vinegar, salt, pepper, and oil in a small bowl. Pour dressing over the chopped vegetables and the cooled grains and cheese cubes and toss well. Taste for correct seasonings. Serve over salad greens.

*If smoked gouda is not available use another smoked cheese as it really makes the dish.
