Turkey Tortilla Soup

5 corn tortillas, cut into thin strips
Vegetable cooking spray
1 small onion, chopped
2 garlic cloves, chopped
1 jalapeño pepper, seeded and minced
1 tablespoon olive oil
4 cups chicken or turkey broth
1 can diced tomatoes with green chilies
2 cups chopped cooked turkey
1 teaspoon ground cumin
salt and cayenne pepper to taste
Toppings: chopped avocado, shredded Cheddar cheese, chopped cilantro, sour cream, chopped green onion

Heat oven to 450°. Place tortilla strips in a single layer on a baking sheet. Spray strips with cooking spray and bake 10 minutes or until browned and crisp. Cook onion, garlic, and jalapeno in olive oil in a soup pot over medium-high heat 5 minutes. Add broth, diced tomatoes, turkey, cumin, salt and cayenne to onion mixture. Bring to a simmer and cook for 10 minutes. Serve with baked tortilla strips and desired toppings.
