1 lb Oryana tofu or firm tofu
1 small onion, diced small
2 cloves garlic, minced
1 tablespoon butter or olive oil
8 stalks asparagus, trimmed, cut into 1 inch pieces, steamed
½ teaspoon turmeric
1 teaspoon dried herbs such as dill
½ teaspoon paprika
3 tablespoons nutritional yeast
1 -2 tablespoons soy sauce
¼ cup vegetable broth
- Mash the tofu in a bowl with a fork or your hands until crumbly.
- Sauté the onion in butter in a cast iron skillet over medium heat about 5 minutes. Add garlic and cook 1 more minute.
- Stir in tofu, turmeric, yeast, and herbs, and cook for a minute. Stir in broth, soy sauce and asparagus and cook 1 or 2 minutes. Taste and add more soy sauce if needed. Serve immediately.
