Peanut Soba Noodle Salad

1 package soba noodles
½ teaspoon dried garlic
1 teaspoon dried ginger
1/2 cup creamy peanut butter
1/4 cup tamari
2 teaspoons toasted sesame oil
1 tablespoon maple syrup
1 tablespoon seasoned rice vinegar
hot sauce, to taste
1 medium carrot, peeled, grated
4 green onions, sliced
1 red pepper, diced small
1/2 cup chopped roasted peanuts

  1. Cook the soba noodles until al dente according to package directions. Drain and rinse the noodles under cold water to stop cooking.
  2. For the peanut dressing: Whisk together the peanut butter, garlic, ginger, tamari, sesame oil, maple syrup, vinegar, and hot sauce in a large bowl until smooth. Add the noodles and veggies and toss to coat. Serve garnished with the chopped roasted peanuts.
