Native American Wild Rice Soup

1 cup wild rice, rinsed
2 cups water
6 cups beef broth
1 pound ground beef
1 large yellow onion, chopped
4 stalks celery, chopped
1 bunch parsley, chopped fine
Salt and pepper to taste

In a large soup pot, brown the beef with onion until onion is translucent, about 8 minutes.  Add the remaining ingredients and bring to a boil.  Reduce heat and simmer for about 30 minutes or until rice is puffed and celery is tender.
