Maple Oatmeal Cookies

1 1/2 cups (3 sticks) butter, softened
1 3/4 cups maple syrup
1 cup cane sugar
2 large eggs
2 teaspoons vanilla extract
8 cups rolled oats
1 cup currants
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon sea salt

  1. Preheat oven to 350°F.  Grease or cover two baking sheets with parchment paper.
  2. In a large bowl, beat together the butter, maple syrup, sugar, eggs, and vanilla until light and fluffy.  Stir in the oats and currants. 
  3. In another bowl, stir together the flour, baking soda, cinnamon, and salt.  Add flour mixture to butter mixture and mix until combined.
  4. Drop by rounded teaspoonfuls about 2 inches apart onto prepared baking sheets and bake for about 15 minutes or until light brown. Cool cookies on wire racks. Makes about 4 dozen cookies.
