Kale and Potato Soup

1 bunch kale, washed, stem removed, leaves cut into thin strips
2 lbs yukon gold potatoes, washed, diced small
2 quarts chicken or vegetable broth
sea salt and white pepper to taste

Place all ingredients in a large soup pot. Bring to a boil, reduce heat, and simmer for 15 - 20 minutes. Taste and add additional salt and white pepper if needed.
