Prepare the radishes ahead of time to allow them to soak up the flavor of the brine.
1 lb ground Duerksen’s turkey
1 tablespoon local parsley chopped
1 tablespoon local cilantro chopped
½ teaspoon ground cumin
ground chipotle pepper to taste
sea salt to taste
¼ cup minced red onion
Combine turkey, herbs, spices and onion and form into 4 patties. Spray both sides of patties with cooking spray. Heat a grill to medium and cook about 3-4 minutes per side. Or fry in a cast iron skillet with 1 teaspoon canola oil. Serve with the pickled radishes.
local radishes, enough to fit in a pint jar
1 cup red wine vinegar
2 tablespoons natural cane sugar
½ teaspoon salt
½ teaspoon mustard seeds
1 bay leaf
Combine brine ingredients in a small saucepan and bring to a boil. Turn off heat and let cool. Pour over radishes and let steep for at least one hour in the refrigerator.
