Gluten-free Brownies

¼ cup natural cane sugar
¼ cup brown sugar
1/2 cup melted butter or coconut oil
1 tablespoon vanilla extract
3 eggs, beaten
1 cup almond flour
1/2 cup cocoa
1/4 teaspoon baking soda
1/4 teaspoon sea salt

  1. Heat oven to 350 degrees F. Beat sugars, butter, vanilla and eggs until smooth. Add almond flour, cocoa, baking soda and salt. Stir to blend. Pour into greased 8 x 8 x 2 inch pan.
  2. Bake for 25 minutes or until center no longer jiggles and top feels cakey. Brownies are done when a toothpick inserted in center comes out clean.
  3. Let cool before cutting.
