Fresh Corn Casserole

8 ears corn
2/3 cups cream
3 tablespoons butter, cubed
1/2 teaspoon sea salt
black pepper to taste

In a large, deep bowl, slice off the corn kernels with a sharp chef’s knife. With the dull side of the knife, press and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside.

Add cream, salt to taste, pepper, and butter and mix well. Pour mixture into a greased baking dish. Bake at 350º for 30 to 45 minutes or until thoroughly heated through.
