Ginger Egg Scramble with Asparagus

4 eggs
1 tablespoon toasted sesame oil
1 lb asparagus, trimmed, cut on diagonal into 1-inch pieces
salt and pepper
4 green onions, trimmed and cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon fresh ginger, finely chopped
2 1/2 tablespoons soy sauce
1/4 cup fresh cilantro, chopped

  1. Whisk together eggs and soy sauce in a small bowl.
  2. Heat oil in wok or large cast iron skillet over medium-high heat. Add asparagus, season with salt and pepper, and stir fry for 4 minutes. Add the scallions, garlic, and ginger and cook another minute.
  3. Add egg mixture and stir fry until egg is just cooked through, about 30 seconds. Toss with cilantro and serve immediately.
