1 lb cherry tomatoes, cut in half
sea salt and black pepper
1/3 cup fresh basil, chopped
1 tablespoon extra virgin olive oil
optional: splash of red wine vinegar
1 loaf crusty baguette, sliced 3/4 inch thick
2 garlic cloves, peeled and sliced in half
1/3 cup extra virgin olive oil
fresh parmesan cheese, shaved
- Mix tomatoes, basil, oil, salt, pepper, and vinegar if using, in a bowl.
- Heat olive oil in a skillet and fry bread until golden brown on both sides. Drain on paper towel-lined plate.
- Rub one side of toasts with garlic clove.
- Spoon tomato mixture onto toasts, top with parmesan cheese and serve immediately.
