  in Main Dishes, Recipes

Meatballs
1 cup onion, chopped
4 cloves garlic, chopped
1 teaspoon ginger, chopped
1/3 cup cilantro, chopped, plus extra for garnish
1 lb ground beef
1 lb ground pork
1 tablespoon fish sauce
1 1/2 tablespoons soy sauce
1 teaspoon sesame oil
black pepper
1 egg
1/2 cup bread crumbs

Glaze
1/4 cup soy sauce
1/4 cup cool water
1/2 teaspoon dry ginger
1 teaspoon sesame oil
3 tablespoons maple syrup
1 teaspoon arrowroot or cornstarch

Garnishes: chopped cilantro, sesame seeds

  1. Place the onion, garlic, ginger, and cilantro in a food processor and process until minced. Combine onion mixture with pork, beef, and remaining ingredients in a bowl and mix well until everything is evenly incorporated.
  2. Heat oven to 350ºF. Shape meat mixture into smooth 1 inch meatballs. Place meatballs on a rimmed baking sheet or two, giving them plenty of space so they’re not touching, and bake for 30 minutes.
  3. While meatballs are baking make the glaze. Whisk all the glaze ingredients together in a small saucepan. Bring to a boil, reduce heat, and simmer, uncovered for 10 minutes.
  4. Remove meatballs from the pan and onto a plate or bowl for serving. Drizzle with glaze, sprinkle with chopped cilantro and sesame seeds and serve with rice.
