½ pint strawberries, washed, hulled and sliced
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon maple syrup
¼ teaspoon salt
Pepper to taste
1 bunch arugula, washed and dried in a salad spinner
½ cup goat cheese, crumbled
½ cup pecans, chopped and lightly toasted
Whisk vinegar, olive oil, maple syrup, salt and pepper in a small bowl and toss with strawberries,
arugula, cheese and pecans. Serve immediately.
