When it comes to making apple cider, Dennis Mackey of Northern Natural Organics in Kaleva, really knows his stuff. Mackey started out working as a youngster on his great grandfather’s farm in Kaleva. He has been making the sweet, thirst-quenching beverage since 1995. And he’s been growing his apples organically since the 1980s.

As to how it’s done, Mackey uses a state-of-the-art, computerized, stainless steel Bucher Press that is also used to press cherries, peaches, strawberries and grapes. In 2010 he pressed 340,000 pounds of fresh apples, or about 7000 bushels. The apple varieties he grows include Macintosh, Jonation, Spy, Ida Red, Red and Gold Delicious, and several others.

Mackey also makes a certified organic hard cider, which starts with a pasteurized cider blend, a little yeast and yeast nutrient, resulting in a refreshing beverage several weeks later. It can be found on draft at Poppycocks, Crystal Mountain and the Cabbage Shed.

Northern Natural Organics cider is distributed not only at Oryana but throughout the Midwest at Whole Foods Markets, Goodness Greeness, and Alberts Organics.

In addition to their delicious cider and hard cider, Mackey has been producing fine, organic wine since 2007 including port wines, regular fruits wines, and an apple ice wine. These and other wines are available for tasting at their tasting room in Benzonia.
